Mémoire - restaurant au château Laborde
The hotel restaurant is called Mémoire. A nod to the family estate's past and the memories left behind by the taste of a dish, a product or a recipe. There's no fuss here, no fads, no manners. There's a sense of the essential, with a focus on what each season has to offer.
There's no fuss, no fads, no manners here. There's a sense of the essential, with priority given to what each season has to offer in terms of fruit, vegetables, game... So the menu is short, to be as accurate as possible, as close as possible to the flavours of the moment. We use local suppliers, starting with the château's vegetable garden. We also use butchers, fishmongers, bakers and cheesemongers from neighbouring properties. Tables are laid in three rooms - one of which can be made private - all with a view over the estate's grounds. Breakfast, lunch and dinner are served in the art of entertaining friends and family after a day in the countryside. The refined is casual. And the cuisine combines simplicity of dish with perfection of execution.
